Turkish Eggs

Delicious and tasty, these eggs are cooked in a spiced tomato base. Topped with crumbled feta and parsley they are the ultimate weekend breakfast item! Try some mint tea for the perfect accompaniment!

Turkish Eggs

1 teaspoon olive oil 1/2 small onion diced 1/2 red bell pepper diced 1/2 teaspoon crushed garlic 1/2 can diced tomatoes 3/4 teaspoon salt 1 teaspoon paprika 1/4 teaspoon cumin 1/4 - 1/2 teaspoon chili powder 5 eggs Feta cheese crumbled Fresh parsley for garnish

Heat frying pan on medium heat. Add onions and bell pepper and cook till soft. Then add garlic and cook for 1 more minute. Add tomatoes and spices and mix again. Leave to simmer till mixture has reduced to a thick gravy like consistency.

Crack eggs on top of tomato mixture. Reduce heat to low, cover with pot lid and cook till yolks and whites are cooked to desired consistency.

Top with crumbled feta and parsley.

Serve hot with toast and mint tea.
