Tuna Melt

Another favourite growing up. Deliciously flavored tuna topped with melted cheese. A clear winner even with the kids!

Tuna Melt


2 cans of tuna meat in brine water – drained

1 teaspoon oil

½ small onion diced fine

5 cherry tomatoes cut into quarters

½ teaspoon salt

½ teaspoon turmeric

½ teaspoon chili powder

½ teaspoon sugar

1 tablespoon dried parsley

2 slices brown bread toasted

2 teaspoons lite mayonnaise

Grated cheddar or mozzarella cheese


Sauté onions in oil. Once onions are translucent add tomatoes and 2 tablespoons hot water. Leave to cook for 2 minutes. Add spices and mix well. Leave to cook for 5 minutes until tomatoes have softened and can be smashed with back of spoon. Add sugar and parsley and mix well. Add in tuna and mix to combine. Set aside.

Toast bread. Add 1 teaspoon mayonnaise to each slice. Spread evenly. Add tuna and top with grated cheese. Broil to melt cheese. Enjoy hot!
