Teriyaki Salmon with Mango Salad

Fresh, tasty and delightful to look at, this recipe is a perfect balance of summer flavors. Tasty and healthy salmon pairs beautifully with the slightly spicy mango salad. This is amazing!

Teriyaki Salmon with Spicy Mango Salad (Serves 2)

2 large individual serves of salmon 3 tablespoons soy sauce 1.5 tablespoons honey 1 teaspoon ginger and garlic paste 1 tablespoon lemon juice 1/4 teaspoon pepper 1/2 - 1 teaspoon chili sauce

Mix well and add to salmon. Marinate for 30 minutes.

Bake in oven for 15 minutes at 180˚c till salmon is cooked through.

Serve with spicy mango salad. See recipe below.

Spicy Mango Salad

1 large mango cut into squares (skin and pit discarded) 1 cucumber 4 cherry tomatoes 1 tablespoon Lemon juice 1/4 teaspoon Salt 1/4 teaspoon Chili powder

Mix all ingredients together. Place in fridge till ready to use.
