Adapted from original recipe by Ina Garten. Serving size for approximately 5-6 adults. Perfect for group gatherings.
Sunday Roast Chicken
Cook time 2 hours. Prep time 30-40min
Preheat oven at 200˚c
6 medium potatoes - peeled and cut into medium size cubes 3 large carrots - peeled and cut into 1.5 inch logs
Place in bowl and cover with cold water. Set aside to prepare chicken.
3 x 1000g (2lb) whole chickens washed and patted dry Onion salt Pepper Crushed garlic Dried Thyme 2 oranges - cut into quarters 150g unsalted Butter
To prepare chicken:
Liberally salt and pepper the inside cavity of chicken. Sprinkle cavity with dried thyme. Place 1/2 teaspoon crushed garlic followed by 2-3 pieces of orange and then 1/2 teaspoon garlic again. Once done secure cavity by cutting skin of chicken near opening and threading chicken leg through. Do on both sides.
In a bowl add butter, 1 teaspoon onion salt, ½ teaspoon black pepper and mix well.
Turn chicken breast side down and smother with butter. Once complete turn chicken back over.
Gently separate breast skin from meat. Try to avoid breaking skin as much as possible. Place a good layer of softened seasoned butter underneath skin above meat. Spread more butter on top of skin and all over chicken. Season with salt light sprinkle of salt .
Complete same process with other chickens. Once all chickens have been seasoned and buttered place in oven proof container sprayed with non-stick baking spray (or disposable roasting tray). Place in oven for 1 1/2 hours uncovered to cook.
When 45 min remaining for chicken, drain water from potatoes. Add to potatoes 1 teaspoon salt, 1/2 teaspoon pepper and ½ teaspoon dried thyme. Mix well. Place on a lined baking tray with dabs of butter. Then place in oven with chicken to cook for 40 min.
Once chicken is done in oven, remove and cover with foil to rest for 10 min. Leave potatoes in oven during this time.
When chicken is rested, turn oven off. Place chicken in serving tray surrounded by potatoes and carrots. Garnish with additional orange pieces (optional) and parsley.
Same seasoning steps can be followed for a single whole chicken. Roast potatoes and carrots in same baking dish as chicken. Optional to include sweet potato and onion.
