Delicious flaky puff pastry stuffed with spinach and feta makes the perfect combination. Enjoy it hot or cold, for lunch or just a snack. Either way you won’t be disappointed!
Spinach and Feta Pastry Squares
Makes 2 pies
1 1/2 cups fresh spinach washed and chopped
1 teaspoon crushed garlic
1 teaspoon olive oil
1/4 teaspoon Salt
1/4 teaspoon black pepper
1 egg whisked
1/2 tablespoon dried dill
Feta cheese
4 square puff pastry sheets
Heat olive oil in a frying pan. Add garlic and cook till fragrant. Add chopped spinach, salt and pepper and cook till spinach has wilted. Set aside to cool.
In a separate bowl whisk egg and dill together. Add cooked spinach and feta cheese (as much as desired) and mix well together.
Place pastry sheets on a flat surface. Brush water across all 4 edges of one pastry sheet. Place filling inside and cover with another sheet. Fork sides closed. Make a small X on the top. Repeat with remaining squares. Brush with egg or spray with Lurpack cooking spray.
Places squares on a baking sheet lined baking tray. Bake for 20-25 minutes at 190°c or till pastry is puffed and golden.
Enjoy hot or cold. Perfect for lunch boxes or after school snacks.
