Puris are originally a creation from Indian cuisine. Inspired by the traditional Indian recipe, this is my family South African version. Essentially puris are puffed pieces of fried dough usually served as part of an appetizer, for breakfast or as a snack.

South African Puris

1 cup flour 1 teaspoon baking powder 50g cold butter 1/4 cup water + 1/4 cup milk heated

Sunflower oil for frying

In a bowl mix flour and baking powder. Add butter and crumb mixture.

Place a pan on the stove. Add sunflower oil and place heat on medium.

Heat milk and water in microwave for 1 minute. Add liquid to flour mixture and form a soft dough. Roll dough out approximately 1 - 2 cm thick. Cut into squares and triangles.

Once oil is hot enough (you will know by placing a test piece in the oil. If it puffs up, oil is ready) fry each piece in oil allowing for them to puff up.

Serve with breakfast beans delight.
