Sooji Porridge (Semolina)

1 tablespoon butter 1 heaped tablespoon fine semolina 1 1/2 cups milk 2 teaspoons sugar or sweetener of choice

In a small pot add butter. Once butter has melted and begins to bubble add semolina. Cook semolina and butter till fragrant (approximately 3-5 minutes). Then add milk and sugar and continue to stir mixture till it begins to boil. Once porridge reaches desired thickness (thick to eat with a spoon or more liquidy to drink from a cup) remove from heat and allow to cool slightly before serving*.

*Be careful for burnt tongues if porridge has not cooled enough. Always test temperature before giving little kids.

Great for cold mornings!
