Nothing says Eid-ul-Adha like Sheepy Cupcakes. Get the kids excited about Eid by making these cupcakes! Better yet, get them to help! Super cute addition to any Eid table! The kids will love it! Kid Approved!
Sheepy Eid Cupcakes
12 vanilla cupcakes baked and cooled. Alternatively, to save time you can buy ready made vanilla cupcakes and then ice and decorate them.
Vanilla Buttercream:
150g butter softened 200g icing sugar 1 teaspoon vanilla essence 1 tablespoon milk
Beat butter and half of sugar together till pale and fluffy. Add vanilla and milk and beat again. Add remaining icing sugar and beat till well combined.
Ice cupcakes to have a flat top. Set aside.
Decorations:
Mini marshmallows Pink sugar (3 tablespoons granulated sugar plus 2 drops red food coloring mixed together) Melted chocolate
Cut 12 mini marshmallows diagonally to form ‘ears’. Dip the inside ‘sticky’ part into the pink sugar. Set aside.
Take a few more marshmallows and cut off a corner to form the nose. Dip that into the sugar as well.
Assembly:
Once cupcakes are iced start by placing marshmallows all around the edge of the cupcake. Then add one ear followed by 3 more marshmallows and then the next ear. This forms the ‘forehead’. Complete this on each cupcake. Then add the nose (be sure the pink sugar part is facing up and not into the icing).
Finally pour melted chocolate into a small ziplock. Secure and then cut the tip of a corner to form a small piping bag. Pipe onto the cupcakes a smile and closed eyes.
