Deliciously spiced chicken and potatoes cooked with bell peppers and onions all smothered in a savory creamy sauce. Serve it up with some roti, naan or side salad. Perfect for a table satisfying dish.
Saucy Chicken and Potatoes
Prepare chicken marinade:
2 tablespoon lite mayo
1 tablespoon ketchup
3 tablespoon sweet chili sauce
1 teaspoon crushed garlic
2 teaspoon aromat/seasoned salt
1 teaspoon lemon pepper seasoning
1/4 teaspoon turmeric
3/4 teaspoon cumin
1/2 teaspoon chilli powder
1 teaspoon sweet paprika
1/4 teaspoon salt
1 teaspoon parsley flakes
Mix together and set aside.
Peel 2 potatoes. Cut into chips (or use pre-cut frozen chips) Drizzle with oil and place in air fryer for 15 minutes.
Cut 500g chicken breast into finger length pieces. Add to marinade and set aside.
Thinly slice 1/2 small onion and 1/2 red bell pepper. Place in a pot with a little olive oil and leave to sauté. Season with little salt and black pepper. Once onion and bell pepper have softened add chicken.
Rinse marinade bowl with 1/2 cup hot water and add to pot. Cook till chicken is cooked through and sauce has thickened!
(Add more water to chicken while cooking if necessary so sauce doesn’t burn or reduce too much).
Add potato chips and mix till everything is covered in sauce. Simmer for 5 - 10 minutes.
Serve hot with paratha/roti/naan and a side salad.
