A beautifully spiced Egyptian spinach and meat stew. Its rich, tomato base serves as the perfect partner to the spinach and meat. It will be sure to have you licking your plate!
Sabanekh
½ medium onion diced fine
1 heaped teaspoon crushed garlic
1 teaspoon butter plus 1 teaspoon oil
500g beef cubes (lean)
½ teaspoon Arabic spice*
½ teaspoon cumin
¼ teaspoon coriander
¼ teaspoon nutmeg
½ teaspoon salt
½ teaspoon pepper
1 tablespoon tomato paste
150 ml liquidized tomatoes or tomato sauce (no ketchup)
2 Maggie beef stock cubes
1 packet frozen spinach
½ lemon – juice only
Melt butter in pressure cooker pot. Add oil and onions and saute. When onion is translucent add garlic and cook till fragrant (approximately 1-2 minutes). Then add beef cubes to pot and mix well. Follow with spices – Arabic spice, cumin, coriander, nutmeg, salt and pepper.
Add 1 tablespoon tomato paste and mix well. Add tomato (smooth), beef stock cubes and enough water to cover meat. Mix well then add frozen spinach
Place lid on pressure cooker (with meat setting selected) and place on high. Once the pot begins to whistles leave for 5 min then reduce to low. Cook for further 10 min then switch off.
Open once steam has reduced then add lemon juice. Stir well and leave for 10 minutes before serving.
Best served plain or with rice.
