Pine Nut Couscous

Light, filling and nutritious. This combination is a surefire hit! Paired with Moroccan chicken and vegetables, this will surely impress anyone who tastes it!

Pine Nut Couscous


1 cup couscous

¾ cup gravy from Moroccan chicken recipe

¾ cup boiling water

1 teaspoon salt

½ cup pine nuts

1 teaspoon butter

1 heaped tablespoon dried parsley leaves

Optional: 1 tablespoon lemon juice


Prepare couscous with gravy liquid from chicken and vegetables and hot water plus salt. Mix well, glad wrap bowl and set aside.

In a hot dry pan add pine nuts and toast on pan till golden. Fluff couscous with fork and add to pan with butter and parsley leaves. Cook till butter has melted and parsley and pine nuts are well combined.


Drizzle with lemon juice just before serving. Serve warm with Moroccan Chicken and Vegetables.
