Delicious peanut butter chocolate chip cookies. The perfect afternoon/late night snack!
Peanut Butter Chocolate Chip Cookies
150g butter softened
3/4 cup brown sugar
1/4 cup white sugar
1 egg
1 teaspoon vanilla essence
1 tablespoon golden flaxseed meal
1 heaped tablespoon creamy peanut butter
1/2 teaspoon salt
1 teaspoon baking soda
2 cups whole wheat flour
1/2 cup semisweet chocolate chips
1/4 cup milk chocolate chips
In a bowl add flour, baking soda and salt and give a quick mix. Set aside.
Combine butter and sugars together till fluffy. Add egg and vanilla and mix well. Continue with flaxseed and peanut butter.
Once creamy add flour mixture in 1/2 cup increments till well combined. Finally add in chocolate chips. Mix again.
Form into balls. Set in fridge for 30 minutes.
Remove from fridge and place directly into preheated oven. Bake for 8 - 10 minutes at 180c.
Place unused cookie dough in freezer for another time.
Allow to cool slightly before eating! Enjoy!
