A hearty, warming dish that combines the comforting flavors of mashed potatoes, pasta and bolognese! Best served with a side of garlic bread!
Pasta Bolognese with Mashed Potatoes
1 box Barilla fusilli pasta
1 Jar pasta sauce of choice
400g lean ground beef
1/2 small onion diced
10 mushroom sliced
Black olives sliced
1 beef stock cube
Salt and Pepper
1/2 cup cooking cream
Mashed Potatoes:
5 large potatoes peeled and diced
Seasoned salt
Pepper
Hot water
1 tablespoon butter
Milk
Fill a large pot with boiling water. Add 2 teaspoon salt. Bring to a boil then add pasta and cook according to box instructions.
While pasta is cooking, heat frying pan on medium heat. Add 1 teaspoon oil and onion. Cook till onions are translucent. Then add ground beef and leave to cook for 3 minutes. Then add beef stock and pepper. Mix well and allow meat to brown. Then add mushrooms and cook for a further 5 minutes. Then add olives, pasta sauce and cream. Mix well. Set aside.
Once pasta is cooked, drain water then add to mince sauce. Mix well so pasta is coated in meat sauce. Add to glass container. Set aside.
In same pot used for pasta bring water to a boil again. Add cubed potatoes and 1 teaspoon salt. Leave to cook till potatoes are soft. Drain water, then mash potatoes with milk and butter. Once potatoes are at a smooth consistency add seasoned salt and pepper. Mix well.
Top pasta with potatoes. Fork the top and place under grill for 5-7 minutes till top has crisped!
A great make ahead dish to just pop into the oven! Makes a large serving!
Serve hot, but great the next day too!
