Onion Egg

This is my favorite! Caramelized onions with perfectly cooked eggs is a hands down winner to me! Best enjoyed with some brioche bread or Hawaiian rolls! For an added kick, enjoy it with some chili sauce!

Onion Egg

1 small onion finely diced 1 teaspoon butter + 1 teaspoon olive oil 4 eggs Salt and pepper Parsley

Place frying pan on stove. Turn stove to medium-low and add butter and oil plus onions while pan still cold. Allow to heat up with pan and begin to cook.

Once onions are translucent and have a slight golden color (slightly caramelized) add eggs to pan. Sprinkle with a little salt and pepper. Allow eggs to begin to firm up. Gently flip eggs over and sprinkle with a little salt and pepper. Cook for 1 minute (for soft runny yolks) and 4 minutes (for firm yolks) then remove from heat*. Sprinkle with parsley before serving.

Best enjoyed hot. For a spice kick try eating it with some chili sauce or mango pickle on the side. Don’t forget the toast, brioche bread, Hawaiian rolls, roti or sweet rolls!

*remember eggs continue to cook even after they are taken off the stove.
