Mushroom and Cheese Omelet

Simple and tasty 5 ingredient breakfast that packs a whole lot of flavor! Sometimes its the simplest combinations taste the best!

Mushroom and Cheese Omelet - makes 1 omelet

4 mushrooms sliced 2 eggs 1 teaspoon oil Salt and pepper Grated mozzarella cheese

Slice mushrooms. Add to a non-stick frying pan with oil, salt and pepper. Cook till mushrooms have shrunk and darken in color. Remove from pan into a bowl. Set aside.

Whisk eggs in a bowl. In the same frying pan you cooked the mushrooms add the whisked eggs. Cook till eggs have begun to firm up then flip to cook other side. Turn heat off after flipping and top the whole omelet with a layer of mozzarella cheese and then the cooked mushrooms. Fold omelet over in half.

Sprinkle with parsley for garnish or hot pepper flakes for a kick. Serve hot.
