Mini Chocolate Celebration Cupcakes

Perfectly chocolatey and the ultimate celebration cupcake! A great choice for kids and adults! These will surely keep everyone happy!

Mini Chocolate Celebration Cupcakes

1 box Betty Crocker super moist dark chocolate cake mix 3 eggs 95ml oil 275ml water

Prepare cupcake mix according to box instructions by mixing eggs, oil and water with powdered ingredients. Use a hand beater to mix ingredients together. Once combined place mixture into prepared mini cupcake baking tray lined with mini cupcake liners. Bake for 12-15 minutes at 180˚c till toothpick comes out clean when inserted in the middle of a cupcake.

Chocolate Frosting

150g butter 250g icing sugar 3 tablespoons cocoa powder 1 teaspoon vanilla 1 tablespoon milk Flake chocolates

In a bowl combine butter and icing sugar. Using hand blender cream butter and sugar till light and fluffy. Then add cocoa powder and milk and mix again. Finally add vanilla and taste for bitterness of chocolate. Adjust with more icing sugar if needed or more milk if too stiff. Place icing in piping bag fitted with nozzle of choice.

Pipe icing on cupcakes. Decorate with flake chocolate by gently breaking into long pieces and placing into icing at an angle. Sprinkle with edible glitter for celebration effect!
