Made with feta, hummus, zucchini and carrots, these savory, tasty and healthy muffins are perfect as a snack or for lunch boxes! Packing in 5 different vegetables these muffins pack a whole lot of flavor! Give them a try to change up your lunchtime!
Savory Mediterranean Muffins
makes approx. 16 - 18 muffins
2-3 small green zucchini grated
1 carrot grated
1/4 medium onion diced small
5 mushrooms diced small
1/3 jar roasted sweet peppers diced
1 tablespoon oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon Italian seasoning
2 eggs
170g low fat yogurt
1/4 cup oil
1 heaped tablespoon sun dried tomato pesto
2 heaped tablespoons hummus
Crumbled feta
1 cup flour
2 teaspoons baking powder
In a bowl mix flour and baking powder and set aside.
Dice onion and mushroom. Heat frying pan on medium heat with 1 tablespoon oil. Add onion and begin to sauté. Once onion is translucent add mushroom, salt and pepper. Cook for 3 more minutes then switch off and leave to cool.
In another bowl grate zucchini and carrot. Place in a dish towel and squeeze out as much water as you can. Return squeezed zucchini and carrot back to the clean bowl.
Add sautéed onion and mushrooms to zucchini and carrots. Mix together. Then add diced roasted sweet peppers and Italian seasoning and mix again.
Add eggs, yogurt and oil. Mix all ingredients together then add pesto and hummus. Mix again till all ingredients are incorporated. Add in feta. Mix again.
Finally add in flour mixture and mix well. Spoon mixture into a non stick sprayed muffin/cupcake tin. Bake in oven at 180°c for 23 - 25 minutes. Allow to cool for 20 minutes before eating.
