A delicious one pot meal of meat, potatoes and rice cooked with Indian spices in a tomato gravy. Hearty, warming and tastes like home! A childhood favorite thanks to my mom! Enjoy it on its own or with a side of cucumber yogurt sauce!
Meat Aknee
1 cup rice of choice
1 tablespoon olive oil
1/2 onion diced
1 tablespoon whole cumin
1 cinnamon stick
1 teaspoon whole cloves
5 whole cardamom
500g lean beef cubes
1 teaspoon salt
1 tablespoon ginger and garlic paste
1 teaspoon turmeric powder
1 teaspoon chili powder (adjust for desired heat)
1 heaped teaspoon coriander powder
Hot water
2 medium potatoes peeled and cubed
1 can tomato sauce (not ketchup) or 400ml liquidized tomatoes
Parsley for garnish
Soak and wash rice in cold water.
In a pressure pot heat oil and onions. Cook till onions are translucent then add whole spices and cook till fragrant.
Then add meat, salt and ginger and garlic paste. Mix well. Add little hot water then add powdered spices. Mix again then add enough water to just cover the meat. Close pot and pressure cook on high heat till pot begins to whistle. Then reduce heat to low and cook for 10 more minutes.
Allow pressure to reduce then open pot and add potatoes and tomato. Mix well then add soaked rice plus 1 and 1/2 cup water. Stir then place on low heat and cook till rice is done.
Once done add parsley. Serve with raita and achar.
