Lemony Chicken Thighs

Tasty chicken thighs marinated in garlic, lemon and oregano for a simple but flavor packed recipe that is sure to please! Give it a go with my lemony cauliflower recipe for a truly healthy meal!

Lemony Chicken Thighs

500g skinless chicken thighs (boneless or bone in)* 3 tablespoons organic rapeseed oil 1 teaspoon crushed garlic 1/2 teaspoon salt 1/2 teaspoon black pepper 1 tablespoon oregano flakes 1 tablespoon lemon pepper seasoning 2 tablespoons lemon juice

Mix all ingredients together. Add chicken thighs. Make sure marinade is completely covering all pieces of the chicken thighs. Marinate for a minimum of 1 hour, preferably over night.

Place chicken thighs on baking paper lined baking tray. Put them in the oven for 15 minutes at 200°c. Then place them under the grill for a further 5 minutes to golden. Turn oven off and leave for a further 5 minutes before serving.


*Wanting to make a bigger batch? Just double the ingredients except for the lemon pepper and oregano - make them 1 1/2 tablespoons each.

Serve hot with Lemony Cauliflower Rice.
