Lemony Cauliflower Rice

A deliciously flavored lemony 'rice' dish that is perfect for those looking to increase their vegetable intake and reduce their carbs. A fresh, healthy and tasty alternative to rice.

Lemony Cauliflower Rice
1 cauliflower head
1 tablespoon butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon parsley flakes
3 tablespoons lemon juice
Rice the cauliflower by either grating it or placing in a blender to chop finely. Set aside.
Heat a large frying pan on medium heat and add butter. Once butter has melted add begins to bubble add the salt, pepper, parsley and lemon juice. Give it a good mix then add the cauliflower rice. Cook till all liquid has evaporated. Then place heat on low and cook for a further 2 minutes.
Serve hot with lemony chicken thighs.
