A beautiful combination of flavors that are sure to delight. Thanks to my mom for passing down this delicious recipe.
Lamb Shank Delight
2 medium lamb shanks (washed and incisions made with knife)
½ teaspoon salt
1 teaspoon ginger and garlic paste
1 teaspoon cumin
½ teaspoon chilli powder
¼ teaspoon saffron bloomed in 2 tablespoons hot water
2 tablespoons Worcestershire sauce
1 tablespoon steak sauce
1 tablespoon molasses of pomegranate
1 teaspoon dried dill
1 teaspoon dried rosemary
1 tablespoon dried parsley
2 tablespoons tomato paste
Mix all ingredients together and marinate shank. Be sure to get marinade in incisions made in shank. Marinate overnight.
Place shanks in pressure cooker with 1 ½ cups hot water. Close lid and turn heat to high. Once pot begins to whistle allow to cook for 5 minutes before turning heat to low for 5 minutes more. Turn heat off and allow pressure to reduce.
Open pressure cooker and add vegetables:
1 large sweet potato peeled and diced into large cubes
2 potatoes peeled and diced into large cubes
3 carrots peeled and cut into large logs
Close lid and turn heat to high. Once pot begins to whistle turn heat off and leave for pressure to reduce. Open lid and serve hot.
