Lamb Burger Patty - yields approx. 8 medium burger patties or 6 large ones.

500g lamb mince

1/4 cup finely sliced parsley

1/2 small onion diced fine

1 teaspoon crushed garlic

2 slices brown bread soaked in 1 cup hot water

2 tablespoons Worcestershire sauce

2 tablespoons lemon juice

1 teaspoon salt

1/2 teaspoon black pepper

In a large bowl add 1 slice of bread. Top with 1/2 cup of boiling water and then 2nd slice of bread and remaining water. Set aside while dicing onion and cutting parsley.

On oven, place heat on high and cooking setting for top level broiler.

Once bread has absorbed water add onion, parsley, garlic, mince, salt, pepper, Worcestershire sauce and lemon juice. Using your hands mix all ingredients together until well combined and mixture becoming stringy. Then take handfuls of the mince mixture and form into round patties. Indent the middle of the patty. This will help with middle of the patty being evenly cooked. Place patties in a freezer safe tray and place in the freezer for 15 minutes.

Note: At this point you can either cook your patties or alternatively place them in a ziplock or air tight container for another time.

Place patties on a oven tray lined with baking paper. Place patties under the broiler until they have slightly browned. Then open oven and place 1/2 teaspoon butter on each patty. Place back under grill till browned.

Note: If cooking from frozen patties allow at least 30 minutes out of freezer first. Then add to oven and bake for 20 minutes at 180˚c. Then place under broiler with butter to brown.

Optional: Once patties have browned. Open oven and place a slice of cheese on each patty. Switch oven off and return patties to oven to melt.

Serve in a burger bun or in lettuce. Recommended to serve with sauteed mushroom or onions for added flavor, sliced onions and some burger sauce.
