Healthy Pancakes

Delicious guilt free pancakes that are only 5 ingredients. Dress them up with whichever fruit you like for added flavor. Enjoy a healthy breakfast that isn't boring!

Healthy pancakes - makes 9 medium smallish pancakes

2 ripe medium sized bananas mashed 2 eggs 3 tablespoons golden flaxseed meal 1/4 teaspoon baking powder 1/4 teaspoon cinnamon powder

Mix all ingredients together. Heat frying pan on stove on medium heat. Spray with olive oil cooking spray. Add batter and cook till golden brown then flip and cook other side.

Note: these pancakes are not as sturdy as regular pancakes so cook for a longer time before flipping otherwise they will fall apart. Also better to make them a bit smaller.

Best served with banana and blueberries.

Optional: serve with honey, maple syrup or other sweetener. For kids, try drizzling with Nutella and add banana slices*.
