Perfectly spiced rice cooked with green beans, onions and tomatoes culminating in a delicious rice dish that is not only the perfect side dish but tastes absolutely delicious on its own!
Green Beans Rice Pilaf
1/2 onion diced 1 tablespoon oil 1 teaspoon crushed garlic 300g frozen cut green beans 1/2 teaspoon salt 1/2 teaspoon pepper 425g (1 tin) tomato sauce (not ketchup) or liquidized tomatoes 1/2 heaped teaspoon cumin powder 1/2 heaped teaspoon coriander powder 2 chicken stock cubes (low sodium) or vegetable stock cubes (for vegetarian version) 1 cup basmati rice washed and soaked 1 cup hot water
Heat oil in a pot with onions. Once onions are translucent add garlic and cook till fragrant. Add frozen green beans, salt and pepper and cook till water has evaporated.
Then add tomato, cumin, coriander and stock cubes and mix till well combined. Add rice and mix well. Finally add water and give a good stir. Reduce heat to low.
Cook till water has reduced to rice level. Turn off heat and cover tightly with lid to steam for 10 minutes. Fork rice before serving.
