Goulash

A Bosnian recipe gifted to me by my brother in laws mother. A rich hearty beef stew made with potatoes and carrots that is perfect all year round! Serve it up with some buttered crispy bread for a truly satisfying meal!


Goulash


1 teaspoon oil

1 teaspoon butter

1/2 small onion diced

1/2 kg lean beef cubes*

Hot water

1 and 1/2 beef stock cubes

2 carrots peeled and sliced

1/2 red bell pepper diced

1 large potato peeled and diced

1 tablespoon tomato paste

1 tablespoon paprika


*Recipe can also be made with lamb cubes


Heat oil in pressure cooker on medium heat. Add onions and cook till onions are translucent. Then add beef pieces. Mix well so beef is coated in onion. Add hot water to pot - enough to cover the beef. Add one beef stock cube and mix well. Close lid, turn heat to high and leave to whistle. Once the pot begins to whistle leave for 5 minutes before turning heat to low. Leave to cook for a further 5 minutes before turning heat off. Leave for pressure to reduce.


Prep vegetables.


Once pressure has reduced, open pot and add vegetables. Mix well. Add tomato paste, paprika and half of the last stock cube. Mix again to make sure tomato paste and stock cube have blended to make the sauce. Close the lid and turn the heat to high. Leave the pot to whistle again. Once it whistles turn heat off and leave for pressure to reduce.


Serve hot with crusty buttered bread.
