1 whole chicken
2 small onions or 1 medium cut into quarters
1 star anise
1 bay leaf
1 tablespoon ginger garlic paste
1 teaspoon white pepper
3 tablespoons soy sauce
2 chicken stock cubes
1L+ water
Add all ingredients to a pot and leave it to cook until your chicken is soft and falling off the bone.
For pressure cooker use - place ingredients inside pot, close lid and place on high heat. Once it starts to whistle give it 10 minutes then reduce heat to low. Cook for further 15min then turn the heat off.
Remove Chicken carefully and shred cooked chicken. Set aside.
Strain broth or alternatively leave the spices and large pieces of onion if you prefer.
Pour broth over soaked vermicelli rice noodles, cooked chicken, mushrooms and boiled egg.
Can also be served alone as a consommé soup.
