Fajita Chicken Pasta

Fajita Chicken Pasta

1 box barilla fusilli pasta 600 g chicken breast cut into small cubes 2 tablespoons fajita seasoning 1 cup pasta sauce 2/3 cup cooking cream 1 chicken stock cube ½ medium onion diced ½ green bell pepper thinly sliced 1 red bell pepper thinly sliced ½ punnett mushrooms sliced 1/4 teaspoon salt 300-400g grated mozzarella cheese

After cutting chicken breast, sprinkle with fajita seasoning and mix well. Set aside

Add pot with water on stove to boil for pasta. Once boiling add 1 heaped teaspoon salt and pasta. Cook for 10 minutes.

In another pot add oil and onions. Sauté. Add bell pepper and mushrooms and season with salt. Cook for a few minutes then add chicken and cook till chicken is no longer pink inside.

Once chicken is cooked add pasta sauce and mix well. Add stock and then cream and mix till well incorporated. Turn off heat and leave to simmer on stove.

Once pasta is cooked, turn off heat and drain pasta. Add pasta to sauce pot and mix well till pasta pieces are coated in sauce. Transfer to serving dish. Sprinkle with mozzarella cheese. Grill to melt cheese! Enjoy hot!
