These delicious no bake energy balls are the perfect on the go snack! Made with peanut butter, oats, honey, flaxseed and chia, they are no only healthy but scrumptious too! Beware : deliciousness may cause excessive snacking!
Energy Balls
1 cup rolled oats
3 tablespoons organic golden flaxseed meal
1 tablespoon chia and blueberry mix
2 tablespoons milk chocolate chips
2 tablespoons dark chocolate chips
3 tablespoons peanut butter
2 tablespoons honey
1 teaspoon vanilla essence
1 cup desiccated coconut toasted
Heat a dry frying pan on the stove. Add coconut and mix till coconut begins to turn a golden brown. Remove from heat and set aside.
In a bowl add oats, flaxseed, chia and blueberry mix, chocolate and mix well.
In another bowl add peanut butter and honey and microwave for 30 seconds. Mix well till honey and peanut butter are incorporated into each other. Then add vanilla and mix again.
Add peanut butter mixture to oats. Mix well. The mixture will be quite thick. Using damp hands roll mixture into ball. If mixture is not holding add 1 teaspoon water to mixture.
Roll in desiccated coconut.
Keep in fridge. Makes approximately 22 snack balls.
