Eggless Chocolate Chip Banana Bread

Delicious, moist and oh so decadent! Made with golden flaxseed, organic rapeseed oil and coconut sugar, this eggless chocolate chip banana bread is the perfect weekend pick me up! Feel a little good about being a little bad!


Eggless Chocolate Chip Banana Bread

2-3 ripe bananas 150ml organic rapeseed oil 170g low fat plain yogurt 2 heaped tablespoons organic golden flaxseed meal 1/2 cup organic coconut sugar 1 teaspoon vanilla essence 2 teaspoons baking powder 1/4 teaspoon salt 1 cup flour 1/2 cup Hershey’s semi-sweet chocolate chips

Preheat oven to 180°c.

Peel and mash bananas in a baking bowl. Add remaining ingredients except for the flour and mix well.

Add flour in 3 batches allowing for flour to be fully incorporated into batter each time. Finally fold in chocolate chips.

Pour batter into a greased loaf tin (add extra chocolate chips on top if desired) and bake for 50-55 minutes.

Allow to cool for 15 minutes before removing from loaf tin.

Enjoy with tea or coffee.
