Crustless Zucchini Quiche

A perfect addition for brunch, lunch or dinner! It will fill your heart after a long day of work! This quiche is not only healthy but tastes delicious! Husband approved!

Crustless Zucchini Quiche

3 zucchini grated 2 carrots grated 4 eggs ¼ cup mozzarella cheese ¼ cup cream 2 cooked chicken breast diced small ¼ cup oil ¾ teaspoon onion salt ½ teaspoon black pepper ½ teaspoon garlic powder 1 teaspoon chicken spice 1 tin creamed corn 1 cup flour


Optional: Feta Cheese

Mix all wet ingredients well then add flour. Mix until well combined.

Spray dish with non-stick cooking spray and add zucchini mixture. Top with dollops of feta cheese. Bake for 50-60 minutes at 180˚c or until top is golden brown.


Serve hot or cold with sweet chili sauce and a side salad.
