Comfort Soup

The weather is finally cooling and with it an array of new germs, coughs and runny noses! This is my go-to soup to help feel better when flu season comes around!

Comfort Soup


10 Chicken legs

1/2 Onion diced

2 Carrots diced

1 large Potato peeled and diced

1 tablespoon olive oil

4 cups water

1 teaspoon Garlic and ginger paste

1/2 teaspoon turmeric powder

1 teaspoon lemon rind

1 tablespoon dried mint

2 Chicken stock cubes

Salt and pepper

1 bay leaf

1/4 cup Vermicelli pasta or pasta of choice

Juice of 1 lemon


Heat large pot on medium heat. Add olive oil and onions. Cook till onions are translucent then add garlic and ginger paste and turmeric and cook till fragrant. Add chicken legs and salt and pepper and mix well.


Add carrots, potatoes and enough hot water to cover the chicken legs. Add stock cubes and bay leaf, mix well and leave to cook on low heat for 30 minutes. Remove chicken legs and strip meat. Discard bones and return meat to soup.


Then add vermicelli pasta, mint and lemon rind and cook for another 10 minutes. Finally turn off heat and add lemon juice to desired amount of tartness.


Serve hot.
