A fresh and healthy salad that is the perfect accompaniment to any main! Serve it up with some roast chicken or even steak for a delightful change to the usual!
Citrus Salad
Lettuce of choice
Cucumber
Carrots
Cherry tomatoes
Handfull of fresh mint leaves
Mandarin
Clean and slice cucumbers, carrots and cherry tomatoes. Wash and slice lettuce and mint leaves.
Peel mandarin and remove white strings. Peel skins from each slice.
In a bowl add 3 tablespoons olive oil, 1/2 teaspoon salt and 1/2 teaspoon pepper, 1/4 cup fresh orange juice. Mix well.
Pour over salad just before serving. Mix well. Enjoy!
