Cinnamon Sugar Crepes with Beef Mortadella (Baloney)

Okay okay, hear me out! This is a sweet savory combination that you don't usually see but believe me when I say it tastes great! The perfect combination for breakfast when you can't make up your mind and want something sweet with something a little salty and meaty. Give it a try before you give it a kick!

Cinnamon Sugar Crepes

Cinnamon Sugar:

6 teaspoons granulated sugar

1 teaspoon cinnamon powder

Mix together in a bowl. Set aside.

In a blender add - 1 egg 1 cup flour 1 cup milk

Blend smooth. Then add half a cup of boiling water to increase the liquidy consistency of the batter.

Heat a frying pan and spray with a little cooking spray. Pour mixture from one end of the pan and then let it flow to fill the pan evenly. Remember crepes are much thinner than pancakes so pour enough to fill the bottom of the frying pan but try not to make it thick. Cook for a few minutes until the crepe is golden underneath then flip. Sprinkle with cinnamon sugar & roll while still hot.

Serve with beef mortadella (otherwise known as bologna sausage or baloney) for a sweet savory treat!
