Delicious, tasty, fall inspired pumpkin pancakes with chocolate chips! Delicately spiced with all the fall flavors we love - pumpkin, cinnamon and chocolate!
Chocolate Chip Pumpkin Pancakes
1 egg
3 teaspoon sugar
1 tablespoon butter melted
Pinch of salt
1 cup puréed pumpkin
1/2 teaspoon cinnamon powder
100g plain flour
1 1/2 heaped teaspoons baking powder
Hershey’s Semi sweet chocolate chips
In a bowl add flour, baking powder, salt and cinnamon powder. Mix till combined. Set aside.
In another bowl whisk egg till yolks and whites are combined. Add sugar and mix for 3 more minutes. Add butter and pumpkin and mix again. Slowly add flour mixture into pumpkin mixture in 3 lots.
Heat frying pan on medium heat. Grease the pan with a little butter. Place spoonfuls of batter onto the pan and add chocolate chips. Cook for 4 minutes then flip and cook the other side.
Enjoy hot
*please note these pancakes are more dense due to the pumpkin purée.
