Chocolate Chip Muffins

A classic, no fuss chocolate chip muffin recipe. Simple, easy and totally scrumptious! This recipe is a sure fire crowd pleaser! Great for weekends, after school treat or an end of week lunch box treat!

Chocolate Chip Muffins


125g Butter softened

1 cup sugar

3 eggs

2 cups flour

4 level teaspoons baking powder

1 teaspoon vanilla essence

1/2 cup milk

3/4 cup chocolate chips (milk and semi-sweet mixed)


In a bowl add flour and baking powder and mix well. Set aside.


Cream butter and sugar together till light and fluffy. Add eggs one at a time mixing thoroughly between each. Then add vanilla and mix again.


Add 1/2 the flour mixture to the butter mixture and mix well. Then add 1/4 cup of the milk. Mix again. Repeat with the remaining flour and milk. Mixture should be quite thick.


Finally fold in the chocolate chips.


Divide batter into cupcake tray lined with cupcake liners. Place 2 tablespoons into each liner. Optional: top with more chocolate chips before placing in the oven.


Bake in the oven at 180°c for 18 minutes. Allow to cool.


Store in fridge in hot weather.
