These are the MOST requested cupcakes from friends and family! That's got to say something. Perfectly sweetened, these will not last long. A perfect combination of chocolate and caramel, its simply hard to resist!
Chocolate Caramel Cupcakes
1 box Betty Crocker super moist dark chocolate cake mix 3 eggs 100ml oil 250ml water 1 tin nestle caramel 300ml cold whipping cream 1 tablespoon icing sugar 100g plain chocolate melted
Caramel Filled Chocolates
Open can of caramel and mix well till smooth and creamy. Set aside.
Prepare cake mix according to instructions by mixing dry ingredients with eggs, oil and water. Beat till well combined. Divide batter among cupcake liners in cupcake baking tray. Fill to 1/2 way. Then place 1/3 teaspoon caramel to the center of each cupcake. Bake for 15-18 minutes at 180˚c until cooked.
Allow to cool completely.
Once cupcakes have cooled spread and thin layer of caramel on top of each. Set aside.
In a cooled bowl add cold cream and icing sugar. Whip till cream has become thick and stiff. Ensure the cream is whipped stiff otherwise it will run off the cupcakes when piped. Place whipped cream into piping bag and pipe cream onto cupcakes.
Drizzle with chocolate and top each with a caramel filled chocolate.
