A childhood favorite with a little twist. Simple, easy and so satisfying, this dish is all kinds of comforting. Chicken drumsticks cooked in a rich tomato curry with potatoes and white beans for added protein and deliciousness! A firm favorite amongst kids and adults alike!
Chicken Curry with White Beans
500g skinless drumsticks 1 tablespoon oil 1/2 small onion diced small 1 teaspoon ginger and garlic paste 1 teaspoon salt 1 teaspoon cumin 1 heaped teaspoon coriander 1/2 teaspoon turmeric 1 tablespoon tomato paste Hot water 1 large potato peeled and diced 1 can white beans 200ml liquidized tomatoes Parsley for garnish
Heat oil in a pot with onions. Cook till onions are translucent. Then add ginger and garlic paste. Cook for 1 more minute till paste is fragrant. Then add salt and spices. Mix well then add tomato paste. Cook for 2 more minutes ensuring the spices and tomato are well blended. Then add 2 cups of hot water. Mix well so the tomato paste and spices have dissolved into the water creating your curry base.
Add the chicken drumsticks and potatoes. Add more water to cover the potatoes. Mix well, cover with the lid and leave to cook till potatoes are fork soft*. Approximately 15 - 20 minutes. Then add the liquidized tomatoes and the beans. Mix well. Leave to simmer for 5 minutes.
*Fork soft = Use a fork to poke your potatoes. If the fork enters the potato without difficulty, your potatoes are done! If its still a bit hard, give it a few more minutes to cook.
Optional: Garnish with parsley.
Serve hot with rice.
