Inspired by Mexican cuisine these chicken and cheese quesadillas are packed full of flavor. Seasoned and cooked with caramelized onions and bell peppers and delicious cheese - they are simply hard to resist!
Chicken and Cheese Quesadillas
Chicken filling (see recipe below) Cheese of choice (I used a mild white cheddar) Tortillas Butter for frying Cilantro for garnish
Fajita spice mix : 1/4 teaspoon chili powder (add more if you prefer it spicy) 1/2 teaspoon salt 1/2 teaspoon sweet paprika 1/4 teaspoon onion powder 1/4 teaspoon garlic powder 1/4 teaspoon cumin
Mix spices together and set aside.
Chicken filling : 2 cups cooked chicken breast shredded 1/2 small onion finely sliced 1/4 red bell pepper diced 1/4 green bell pepper diced 1 tablespoon olive oil
Fajita spice mix 2 heaped tablespoons taco sauce/salsa or pasta sauce (add spicy salsa if you prefer more heat) 1 tablespoon sliced black olives 1/4 cup finely diced mushrooms
In a frying pan add oil, onions and bell peppers. Cook till veggies have softened and begin to slightly brown. Add shredded chicken plus half of the spice mix. Mix well. Add sauce, olives and mushrooms and remaining spice mix and mix well again. Set aside.
Place another frying pan to heat. Take a tortilla and slightly butter one side. Place buttered side down into pan. Top with cheese, filling and then more cheese. Take a second tortilla and butter one side. Place the not buttered side down and press down firmly. Once cheese has melted and tortilla browned flip tortilla to cook the other side.
Repeat with remaining tortillas till filling is finished. Cut into triangles and sprinkle with cilantro before serving.
