A traditional Bosnian kebab of grilled minced meat traditionally served on bread with onions and sour cream. A favorite amongst southeastern Europe, Chevapi has become a local favorite among Bosnian communities around the world. Simple in its ingredients yet so easy to make and unbelievably delicious! I was lucky enough to learn this recipe from my Bosnian brother in laws mom! Thank you Mama Minka!
Chevapi
500g lamb mince - minced twice
500g beef mince - minced twice
3 flat tablespoons baking soda
1/2 cup breadcrumbs
2 teaspoons dry vegetable stock (vegeta) or 2 vegetable stock cubes*
1 teaspoon salt
1 cup warm water
1/2 teaspoon black pepper
*If using vegetable stock cubes, dissolve cubes into the warm water first.
Add all ingredients to a large mixing bowl and combine till all ingredients are incorporated and the mixture is stringy.
Roll into thin sausages and cut into finger length pieces. Cling wrap individual portions of 10-12 chevaps and place in freezer.
To prepare: Heat a frying pan on high heat. Place chevaps on frying moving constantly by shaking pan or using wooden spoon. Once the chevaps have browned on all sides add 1 tablespoon water to pan and cover with 2 slices of bread for 3 minutes. Place bread on plate and top with diced onion then chevaps. Serve with a side of sour cream.
Alternative serving suggestions - with chips and hot sauce.
