Cheesy Scalloped Potatoes

Nothing says comfort food like creamy, cheese, fork soft potatoes!

Cheesy scalloped potatoes

2 large potatoes thinly sliced 1 chicken stock cube dissolved in 150ml hot water ¼ cup cooking cream Mozzarella cheese

Layer potatoes in microwave safe dish alternating each layer in a different direction. Pour stock over potatoes and cover with cling wrap. Fold over one corner of cling wrap to allow steam to escape. Microwave for 12 minutes. Remove cling wrap (be careful for the hot steam and hot dish) and drizzle cream and sprinkle mozzarella cheese on top. Return to microwave for further 3-4 minutes. Serve hot.
