Cardamom and Rose infused Almond Brioche Croissants

Decadent almond croissants at home. Turn store bought croissants into these show stopper almond croissant with just a few ingredients. Infused with cardamom and rose for an added surprise for your taste buds, I promise these wont last! Perfect for a cup of tea or coffee!


Cardamom and Rose infused Almond Brioche Croissants


Croissants:

6 St Pierre brioche croissants

150g unsalted butter

1/3 cup brown sugar

1 egg

3/4 teaspoon vanilla essence

3/4 teaspoon cardamom powder

1 cup almond flour

1/4 cup icing sugar for dusting

Blanched Almond slices for topping

Dried edible rose petals for topping


Syrup:

1/2 cup sugar

1/2 cup water

1 teaspoon rose water


Preheat oven to 190°c.


In a small pot add water and sugar and place on medium heat. Once sugar begins to dissolve add rose water. Continue to stir till all the sugar has dissolved. Set aside.


In a mixing bowl cream butter and sugar together till pale and fluffy. Then add egg, vanilla and cardamom powder. Mix again till well incorporated. Finally add the almond flour and mix till the mixture becomes creamy. Place in fridge till ready to use.


Prepare a baking tray by lining with baking paper. Cut each croissant in half. Using a pastry brush gently brush the syrup onto each side and also the top of each croissant.


Place 2 heaped teaspoonfuls of almond filling on each croissant and spread out. Close the croissant and add 1 teaspoonful on the top. Sprinkle with sliced almonds.


Repeat till all the croissants are completed with filling and topping.


Place in oven for 13 - 15 minutes till golden.


Allow to cool then dust with icing sugar and top with rose petals.


Enjoy with tea or coffee!
