Delicious, homey and perfectly spiced, this cabbage and meat curry will warm your belly, leave you feeling happy and the house smelling AMAZING!
Cabbage and Meat Curry
1/2 small onion diced
1 tablespoon olive oil
1 cinnamon stick
1 flat teaspoon whole cumin
3 whole cardamom
1 kg lean beef cubes
1 teaspoon salt
1 teaspoon ginger and garlic paste
1 flat teaspoon turmeric powder
1/2 teaspoon chili powder
1 teaspoon coriander powder
1 can diced tomato liquidized smooth
1 small cabbage quartered
Heat pressure cooker on medium heat and add oil. Add onions, cinnamon, cumin and cardamom. Cook till onions are translucent and whole spices are fragrant. Add meat, salt and ginger and garlic. Mix well. Add water enough to cover the meat and set pressure cooker on high. Cook till the pot begins to whistle. Leave for 5 minutes before reducing heat to low and cooking for a further 10 minutes. Then turn off and allow pressure to release.
Once pressure has released open the lid and add liquidized tomatoes. Mix well then remove 1 cup of sauce. Add cabbage then top with remaining sauce. Add 1/2 cup water then close the lid. Place pressure cooker on high and leave to cook till pot whistles. Once it does, turn heat off and leave pot on stove.
Serve with rice.
