Prawns marinated and baked in a seasoned bell pepper sauce that will delight all your taste buds! Serve it up with some chips, tartare sauce and salad! Simply delicious!
Butterfly Prawns
Marinade:
1/2 red bell pepper diced
1 tablespoon chili sauce
1 teaspoon crushed garlic
2/3 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon oregano
1 heaped teaspoon paprika
1/4 teaspoon chili powder
Juice of 1/2 lemon
3 tablespoons olive oil
2 tablespoons apple cider vinegar
Blend together till smooth. Place mixture in a frying pan on medium heat. Cook for 5 minutes till mixture heats through and begins to boil.
Remove from heat and then add 1 heaped tablespoon tomato paste. Mix well. Set aside to cool down before using.
Once cool. Add 2 tablespoons lite mayonnaise. Mix well. Marinate prawns by dipping prawns in marinade. Place marinated prawns in fridge for 4 hours.
Heat oven to max temperature on grill. Place prawns in middle shelf and cook for 15 minutes. After 15 minutes adjust prawns to upper shelf (closest to grill) for a further 2-3 minutes.
Remove from oven and pour garlic lemon butter on top for added flavor.
Garlic lemon butter:
In a bowl heat 2 heaped tablespoons butter in the microwave for 30 seconds or until melted.
Remove from microwave and add:
1/2 teaspoon garlic powder
Juice of a 1/3 lemon
1/4 teaspoon salt
Mix well. Pour butter mixture over prawns once cooked.
Serve with chips and tartare sauce.
