A hearty and healthy breakfast that breaks away from the usual. Delicious beans cooked with tangy tamarind and spices. Accompanied by tasty puris and a fried egg for a total and complete breakfast meal.
Breakfast Beans Delight
1 tin baked beans
1 tin garbanzo beans/chickpeas (drained)
1 small onion diced small
1 tablespoon tamarind paste
200ml hot water
1 cinnamon stick
2 small cardamom pods
1/2 cup liquidized canned tomatoes
1 tablespoon tomato paste
1/2 teaspoon salt
1/2 teaspoon turmeric
1/2 teaspoon chili powder
In a pot sauté onions in oil. Add cinnamon stick and cardamom pods. Then add tomatoes, tomato paste and spices. Let it cook for 2 -3 minutes, then add baked beans and chickpeas. Mix well.
In a bowl add tamarind paste and hot water. Dissolve into a thick gravy. Discard seeds (by hand or preferably by straining the tamarind). Add tamarind to the beans. Simmer for 5 minutes. Remove cinnamon stick and cardamom pods. Garnish with parsley.
Serve with puris and a fried egg for a complete breakfast! See pic below.
