Baked Kofta

Delicious meatballs cooked in a little spicy tomato sauce with vegetables. Perfect for large crowds! A great prepare ahead dish to just place in the oven!


Baked Kofta


Kofta:

500g lean beef mince

1 teaspoon salt

1/2 teaspoon pepper

3/4 teaspoon cumin

1/2 teaspoon coriander

1 tablespoon lemon juice

1 tablespoon Parsley flakes

2 slices whole wheat bread soaked in 1/2 cup hot water


Place bread in a bowl. Pour water over slices to soak. Leave for 3 minutes then add mince and spices. Using your hands mix mince till bread, mince and spices are mixed together. Form into kofta patties. Set aside.


Sauce:

1/2 small onion diced small

1 teaspoon minced garlic

1/2 jar Barilla arabiatta sauce

1/2 jar sundried tomato pesto

1 teaspoon vegeta seasoning

1 tablespoon oil

1 tablespoon tomato paste

1 cup hot water


In pan heat oil and onions. Cook till onions are translucent. Then add garlic. Cook for 1 minute till garlic is fragrant then add sauce, pesto and tomato paste. Mix well. Add vegeta and mix again. Once ingredients are mixed together turn heat off. Add 1 cup of hot water. Mix well and remove from stove. Set aside


Assembly:

5 small light green zucchini cut into finger length pieces

2 potatoes peeled and cut into finger length pieces

2 carrots peeled and cut into finger length pieces

1/2 onion sliced

Salt and pepper

Optional: 1 eggplant cut into finger length pieces

Sauce


In an oven safe dish, spray with non stick cooking spray. Place cut vegetables in a bowl and sprinkle with salt and pepper. Assemble dish by placing kofta and veggies inside. Finally, pour sauce over, cover with foil and place in oven for 1 hour at 200°c. Then remove foil and bake for 10 more minutes to brown.


Serve hot with rice, bread or salad.
