Addictive Almond Biscuits
125g butter softened 1/3 cup caster sugar 1/3 cup cornflour 1/3 cup slice almonds ground 1 cup flour 100g Lindt white chocolate Desiccated coconut
Mix butter and sugar until well combined. Add cornflour and mix again till well incorporated. Add almonds and mix to ensure almonds are evenly in the dough. Add flour and mix till soft dough forms. Must not stick to sides or bottom of bowl.
Using hands roll into small balls. (Size of a marble - They will expand when baked). Bake at 170˚c for 11 - 12 minutes. Allow to cool completely.
Melt white chocolate in a microwave safe dish in the microwave for 1 minute (in 15 second intervals) till smooth and creamy. Allow to cool slightly then add to a ziplock bag. Secure then cut the tip of a corner. Pipe chocolate in a circle on biscuit and then fill in with more chocolate. Sprinkle with coconut. Repeat for each biscuit.
