Homemade savoury roti’s that are the perfect accompaniment to any dish! Soft and perfect any time of day, these roti’s also taste great heated up with a little butter on a frying pan.. go ahead, the possibilities are endless..
Roti
1 cup flour
1/4 teaspoon salt
1/4 cup olive oil
1/2 - 1 cup boiling water
Canola oil
Melted butter
In a bowl add flour and salt and mix well. Add oil and using your fingers crumb the oil and flour mixture together till fine breadcrumbs.
Make a well in the middle of the flour and add some boiling water. Using a fork, begin to mix flour and water together. Continue mixing and adding water till a soft dough forms.
Move dough out from bowl onto a floured work bench. Knead dough a little more so it is no longer sticky. Divide dough into equal pieces. Cover pieces with a little canola oil. Roll each one out into a round circle. Rub canola oil on top and set aside.
Heat frying pan on medium heat. Place roti oil side down and cook till roti has puffed, then flip and cook the other side.
Place on a plate lined with foil. Spoon some melted butter on the top. Cover with foil to keep warm while rolling and frying the remaining rotis.
Enjoy warm or cold. Best to keep covered in foil and in an air tight container.
